Stuffed and creamy mushrooms – Appetizer

I was just today rethinking what kind of recipe I should post for you, and right then I recalled a dinner we had few nights ago. Had some friends over and decided I need quick meal prep, starting from the appetizer, therefore I decided I should try to make these delicious stuffed mushrooms. They are perfect when the hunger strikes, just enough to wake up your senses.

So to cut to the chase, you will need the following ingredients for this quick Appetizer:

Olive Oil2 teaspoons
Large White Mushrooms12
Green pepper1/2 cup
Onion 1/2 cup
Cherry tomatoes1/2 cup
Pinch of salt
Black pepper
Romano Cheese (or by your preference)1/4 cup
Grated Parmesan1/4 cup
Baby spinach1/2 cup

The first thing you will do is preheat the oven at 325 F.
Place the stems free mushrooms on the baking sheet evenly and bake for around 12 minutes.

Heat 1 teaspoon of oil in a medium skillet and add in the mushrooms steams, the pepper, spinach, onion, garlic and saute for around 5 – 8 minutes. Add in the cherry tomatoes and stir in for 2 – 3 minutes more. Just before turning off the heat add in the cheese, the parmesan, the salt and pepper. Mix them all well.

Divide the mixture between the mushrooms caps evenly. Sprinkle each of them with the remaining cheese. Broil everything for another 3 minutes.
